Blueberry Muffin Strusel















I couldn't resist buying a 2 pound box of blueberries from Costco this weekend. I love fresh blueberries in the summertime! Ok great.. so now what am I going to do with all these berries? Thus, I went in search of the perfect blueberry dessert recipe.















I stumbled upon this blueberry muffin recipe online...complete with a dash of lemon zest and a crumbly top!















The muffins turned out great! They were really soft and fluffy, with juicy blueberries inside. The crumbly top was crispy and had a nice crunch to it. It added just the right amount of sweetness to balance the slightly tart blueberries! The only thing I would slightly change is the amount of lemon zest. I'm a huge fan of citrus, so next time around, I will add a dash more lemon zest, and maybe even some lemon juice as well.















Overall, they were a huge hit! My first time making muffins was a success! I made only a small batch of 12 and they were gone almost instantly! The hubby really like them, too. I'll have to make a second batch just for him. Yay! I'm well on my way to "Goddess-dom." =)
